Chef-owner Paul Barthel of Peppercorns creates panforte this month, calling the Italian treat more similar to candy than cake. He says it’s reminiscent of toffee in its chewiness, and is addictive at Christmastime. He shares his recipe, which includes dried fruits, as well as chocolate, nutmeg, cloves and walnuts. It’s sold in squares. “Not a lot of people make it, but it’s remembered (from) back in the ‘50s and ‘60s. (We’ve) brought it back.” Also among Peppercorns restaurant’s claims to fame are dessert breads. Barthel says the holidays mean the return of cranberry nut bread baked as mini loaves. “We will sell upwards of 200 to 300 loaves,” he says, and divulges a gifting secret. “It’s not uncommon for customers to ask our baker to leave off the label … they will buy multiple loaves to give away as Christmas gifts.”
